Perfectly Peachy Pops

It's hot, hot, hot out, and your throat is screaming for a cool me down, right?  Well, don't reach for those high calorie, loaded with sugar, fattening temptations straight from the ice cream isle.  Trust me, your swimsuit/bikini will never forgive you.  Try these perfectly peachy pops instead, and with only 33 calories each you won't have to add a second workout.  Here's the low down:

Ingredients:

  • 1 1/4 pounds ripe peaches, (3-4 medium), halved and pitted
  • Juice of 1 lemon
  • 1/4 cup freshly squeezed orange juice
  • 1/4 cup sugar, or to taste
  • 1/4 teaspoon vanilla extract
  • 1-2 tsp. finely chopped lemon verbena, mint, or basil (optional)

It's all about preparation:

  1. Coarsely chop peaches in a food processor. Transfer 1 cup of the chunky peaches to a medium bowl. Add lemon juice, orange juice and sugar to taste (depending on the sweetness of the peaches) to the food processor. Puree until smooth. Add to the bowl with the chunky peaches and stir in vanilla.  For a little herby kick add your choice of mint, lemon verbena, or basil (just try it, you may be pleasantly surprised).
  2. Divide the mixture among twelve 2-ounce or eight 3-ounce freezer-pop molds (or small paper cups). Freeze until beginning to set, about 1 hour. Insert frozen-treat sticks and freeze until completely firm, about 1 hour more.
That's it!!  Simple, right?  If you like peaches try adding chunks of peaches to the puree; this will give your tastebuds a periodic surprise as they encounter a piece of peach while your devouring your yummy popsicle.   As hard as it might be, don't be stingy, let the kids try one too!
